Spilling the Beans of Mommy Guilt

I dreamed of being the quintessential example of a perfect mom who can juggle a million things and have a smile on her face all the time. I failed miserably at being the supermom. Motherhood comes with its own set of problems and a big one is being able to realize that in spite of giving birth, you are just a normal person who forgets the grocery shopping.

It was one of those days and I had to come up with a meal based on whatever I could find in the refrigerator. I had to dig deep and ended up with these three ingredients -

Frozen Lima beans

Tater Tots

Some spinach

I decided to combine them in the best possible way.

A bag of frozen Lima beans

About a cup of Tater Tots -I microwave them to soften them up.

A cup of spinach finely chopped

One small onion

Ginger/Garlic paste

1 tsp Thai Green curry paste

2 tsp Red Curry powder

1/2 cup of coconut milk

fresh ground black pepper

 2 tsp of dried mint leaves

Start with  a tsp of oil in a pan and fry the Onions, Ginger/Garlic paste and the Thai green curry paste.

Add the beans, spinach and the curry powder. 

Let it cook for about 5 minutes.

Add the coconut milk, black pepper, tater tots, salt. Cover the  pan and cook for 5 - 10 minutes.

Turn off the heat and let it sit for another 10 minutes

 Add  the dried mint leaves.

Hope you enjoy the dish. You can substitute the tater tots with real potatoes. Boil and peel the potatoes and add them to the dish.
