I tried to imagine. I decided to stitch the egg carton. He looks at me and goes are you seriously going to stitch with a needle and thread on to the egg carton. Good luck Mama. We did exactly that and ended up with a pretty handsome dragon.
When we were done admiring our imagination, we realized we cant feed on foam dragons and it was almost dinner time. I walked in to the kitchen determined to act on my new found imaginative instincts. I came up with Fish and Rice with Lentils. While at it, I decided to throw in few veggies to make it a complete wholesome meal.
3 fillets of Catfish or Tilapia or Halibut would be good in this recipe
Thaw the fish and season with salt, red chili powder, black pepper and 3 tsp of lemon juice.
Let the fish get cozy for 15 minutes.
Fry the fish with a tsp of olive oil.
RICE with LENTILS:
I cup of rice
1/2 cup of Yellow Moong Lentils - These are very light and cook faster.
1 cup of vegetables - You can add any kind. I had some red peppers, Broccoli, squash and carrots.
Add about 1 and 1/2 cups of water and cook the lentils and rice with the vegetables. This can be done on the stove top or pressure cooker. If using a pressure cooker, add 2 cups of water.
Heat a pan with a tsp of olive oil. Add 2 cloves of chopped garlic and 1 cup of chopped spinach (Cooking spinach along with rice and lentils makes it soggy, sauteing it towards the end gives it just about the right consistency) .
Once the spinach wilts, add red curry paste or red chili powder and let it cook for about 50 seconds.
Add the cooked rice, lentils and vegetables to the pan and mix them all together.
Turn off the heat and let it sit for 15 minutes.
Serve the fish along with the rice and lentils. This is a guilt free meal loaded with oodles of imagination.
