The little guy sometimes comes up with hilarious ideas which reiterate the joys of being a kid and not giving a hoot about the worldly worries. He took two simple worlds and constructed an entire comic strip around them. The words were Bare Bear and there was a cuddly cat and a dazzling dog to go with it. The cat and dog are wondering how much can a Bare Bear Bear the cold. In the end they discover the Bear is not Bare, its a grizzly bear that scares the wits out of the poor cat and dog. we had so much fun with this project.
Something as fun as this calls for a fun snack. I made these gluten free chickpea pancakes before, but he was sort of uninterested them. I improvised a little bit and made these apple chickpea flour pancakes especially for the little one. It was a huge hit. He even chopped and stirred the pancake batter.
1 cup of chickpea flour
1 apple peeled and grated
1/2 cup of milk
1/2 cup of sugar
1/2 tsp of ginger powder
1 tsp vanilla extract
Mix the chickpea flour and sugar in a bowl.
Add the egg and milk and stir them all together
Fold in the grated apple, ginger powder and the vanilla extract.
Heat a tsp of olive oil and make the pancakes.
You can serve them with maple syrup/yogurt or you can just have the bare pancakes.
